In this blog, you are going to get poor grammar, a few spelling mistakes and hopefully a few laughs. But know this, we are trying really hard to get you a nutritious delicious beverage that is going to make you feel good from the inside out.
Our Story
Everybody has a story, right? Ours is really simple. (background- I own a small brewery in my hometown) A few years ago my buddy brought me a sample of his kombucha home brew. I asked him what it was and he said it was a 2000-year-old health beverage and that it was fermented tea. I laughed, it was 2000 years old and we had never heard of it. So I threw it in the fridge. Three days later, out of curiosity, I decided to try it. It was very different, it had that vinegar taste, but I could get around it. It was good so I called him to ask more about it, he asked me if I liked it, and I told him I did. It was at that point he said, “It’s because your body is craving it.” and it was those words that threw me for a curve.
Was my body really craving it?
I had to do some research on that. Could my body really be craving this mysterious concoction? I spent months researching this and trying to find out what it was, and if it was really good for me.
I learned a ton about kombucha in my research. I will share it with you later, but let’s just say this, I am a believer. I am a believer in probiotics, B Vitamins, and acetic acids. I believe the health benefits of tea. I believe that different teas have different benefits, I believe that if we can deliver a great tasting kombucha (not harsh, and not sour) people will drink it. I believe that food is medicine and I believe that our bodies naturally crave the goodness in the beverage. I hear it from our customers all the time.
Start Date
I started making “Timbucha” (disclaimer: The name really started as a joke) commercially in January 2016. Citrus carbonated and uncarbonated were the first recipes and our taproom was the perfect place to test it out. People really liked it and It wasn’t long before we started hearing all sorts of stories about how people felt about the beverage. Can you imagine that? A brewery making a healthy beverage.
