Years ago, we introduced Timbucha to the Culinary Institute of New York expecting to see it on the shelf. It never got there. When we asked why, the manager laughed and told us: "The staff keeps drinking it before we can get it out." The same thing happened at Twisted Rail Brewing. They eventually had to stop stocking it because employees were drinking it faster than they could sell it.
That's when we realized something important:
